Is the LogFile function per the above hooked up?

No. It's always Logfile.txt, it appears in the data folder and the only option is "Append" or overwrite with each run.

These are currently in my NBI under [LOGGING]. Any of these redundant?

Nope. Look in the logging settings. Those settings control these options.
