Restrict no of days headers to a particular group

I have a subscribed newsgroup which is huge, and can take forever to download the new headers. Is there a simple way to restrict this particular group to say, a couple of days headers - yet leave my other subscribed groups at their current settings?

There's no way to automatically do it. The reason is that Newsbin never intended you to have gaps in the group. By restricting how far back you go each time you download headers, you're introduce gaps in the stored headers.
If you don't care about that, you can purge the group "Post Storage/Delete Stored Posts" before update and keep your "Download Age" set to a couple days. Or you can right click the group "Post Storage/Use Download Age" which does the same thing without purging the older headers.
